Sustainability-In-Action: Mosaic Cafe is a cozy neighborhood coffee shop that safely and efficiently cleans their counters and dishes with vinegar and warm water. The owner picks up approximately 70% of the cafe’s food from local markets. Mosaic Cafe rarely distributes disposable supplies, as many customers choose to stay in the cafe to eat and drink.

Sustainability Goals: Mosaic Cafe plans on reduce their water usage by installing aerators in all their faucets. The cafe will join Tap-It, which allows customers to fill their water bottles with tap water from the faucet. They have also committed to buying post-consumer paper products, such as toilet paper and paper towels. The cafe also plans on decorating and greening up their cafe with indoor plants.
