Sustainability In Action: Zum Schneider is a Bavarian indoor biergarten and restaurant, featuring 12 German beers on tap, a traditional Bavarian-German menu, and seasonal specialties. They sell local wines, use pasture-raised upstate meat and buy some vegetables from the Union Square Greenmarket. They have always been modest with their air conditioner use. Since joining EcoBizNYC, Zum Schneider has incorporated many sustainable practices including: switching to wind energy, purchasing green cleaning products, bathroom supplies and recycled paper to-go containers, and using biodegradable plastic and garbage bags. They have worked diligently to train their employees to be more conscious of their environmental impact, and these changes have reduced their waste output by at least 30%. In addition, they save water with faucet aerators in their bathrooms, and request that their customers ask for plastic cutlery.
Sustainability Goals: Zum Schneider plans to save additional water by installing water displacers in their toilets. They also plan to install a filtered water system, improve indoor air quality with plants and use organic compost on the plants. Zum Schneider is also in the process of researching ways to compost their green waste. When they complete their energy assessment, they plan to update their lighting to save electricity.
